Like I mentioned last time, I’m working my way through my cookbooks. We’re taking a break from The Mafia Cookbook this week so instead I’ve got one recipe from Mrs. Whaley’s Charleston Kitchen
(indicated with an asterisk). I always have some exciting (well, to me anyway) news for next week’s menu plan and it is the reason that this week’s is only 5 days. But you’ll have to wait until next week to find out.
As always, I use the Publix weekly ad to make my menu to help save money.
Dinners
Monday – Tomato, Basil and Mozzarella Salad
Tuesday – Caramelized Onion and White Bean Flatbread with Salad and Homemade Italian Dressing
Wednesday – (Cookout) Potato Salad and Mint Iced Tea
Thursday – Chicken Tricolore with Roasted Cauliflower
Friday – Eggplant Pie*
Breakfasts – Whole Wheat Honey Pumpkin Muffins, Plain Greek Yogurt and Blueberries, Eggs, Berries
Lunches – Leftovers, Turkey Sandwiches with Cheesy Broccoli, Peanut Butter Sandwiches with Raisins, Tuna Cheesies, Eating Out
Snacks – Black Bean Brownies, Natural Popcorn, Berries, Homemade Watermelon Popsicles, Homemade Cinnamon Raisin Bread

I guess the Black Bean brownies grew on you?

Marcella and I like the brownies…my husband just doesn’t.
He’s not eating any “treats” right now (trying to get to his idea of his “ideal” weight) so I can make these and not feel bad he doesn’t like them.
The watermelon popsicles I saw on a friend’s Facebook picture and asked her how she made them. It’s SO simple! Just puree and put in molds! Marcella loves watermelon so I’m excited to try this since I JUST bought molds last week.

We had a caprese salad tonight… so yummy!!! The fresh mozzarella and the juicy tomatoes from our garden… with the basil sprinkled right over the top… oh my goodness. Summertime on a plate.

It was so good! The fresh mozzarella was on sale so I thought that would be a nice summer dinner meal.

Your menu sounds Oh So Good! I wish my husband would eat Tomato/Mozzarella/Basil Salad. I LOVE it, but he won’t touch uncooked tomatoes if I paid him.
