What I have been trying to do during the challenge is be more conscious of what foods I’m buying and think of alternatives to anything that comes in a box, bag or can. I mean, I generally do that anyway but I had been more slack since having a baby and not having as much time in the kitchen as I previously had had.

Now that Jude is older (and I’m finally getting comfortable wearing him on my back), I’m taking more time to prepare dinners. So back to making more things from scratch. One thing I do struggle with is how long it takes me. I’m just really slow in the kitchen. So I need to give myself more time if I need dinner ready in a certain time frame which is a bit of a challenge for me.

This got me to thinking about having some meals in the freezer that can be taken out still frozen and popped in the oven on those days where play dates run longer than I anticipated and I get home late or other things come up that require me to make something quick. I’m contemplating making some pizza dough, making pizza sauce and chopping up some veggies and putting together some pizzas for the freezer.

Another thing I’m thinking of doing again is a month long meal plan. Sadly, my last attempt was thwarted by horrendous morning sickness. I didn’t know I was pregnant at the time and found out the day after I purchased all my ingredients. As soon as I found out, I knew I most likely would not be able to eat any of the meals. I’m one of those “lucky” people who is struck with morning sickness starting at week 5.

So, I guess the easiest thing has been transitioning back to less and less bag/box/can foods and the hardest has been allowing enough time to prepare more from scratch.
